Our Beverage Director, Joseph Stark, joined Clare Ashford on BBC Radio Shropshire this week to talk all things drinks, dining, and how we do things differently at Wild Shropshire.
In the interview, Joe shared his journey, from falling in love with wine to leading the drinks programme at Wild Shropshire, where he’s reimagining how non-alcoholic pairings can shape a fine dining experience.
He spoke about the creation of our Creations Flight - a fully non-alcoholic drinks pairing made in-house using ingredients grown and foraged on our farm, as well as his recent inclusion in the Top 100 Sommeliers Shaping the UK Wine Scene and his win at the 2025 Innovation Awards.
He also covered sustainability in the glass, the craft of fermentation, and why a good pairing should always enhance the story of the food.
