Sample Menus

At Wild Shropshire, no two menus are the same. Our dining experience is built around the seasons, the weather, and the landscape around us. Each day, the menu is written based on what is ready to pick from our farm, what has been foraged locally, and what has been fermenting or developing in the lab.

Because of this, the menu changes daily, sometimes even between services, so the examples below are designed to give you a feel for our style, but they are not the menu you will experience when you dine with us.

​

To heighten the experience, the menu is revealed only at the end of your meal. This element of surprise has become a defining part of Wild Shropshire’s identity, encouraging you to approach each course with curiosity, focusing first on flavour and sensation before discovering the ingredients and the story behind them.

Sample Tasting Menu

Our tasting menu is terroir-led, ingredient-focused, and ever-evolving. Each course is built around what’s at its peak, often highlighting lesser-known plants, heritage breeds, and ingredients grown metres from the kitchen. Expect delicate, unexpected combinations that respect both nature and flavour.

Sample Wine Flight

Our drinks flight highlights small producers and artisans working at the top of their game - people with a deep respect for terroir and a love for the land they tend.

​

We aim to showcase excellent examples of type, alongside interesting, lesser-known styles and regions, as well as rare wines that Joe has carefully sourced. Each service features a unique wine flight, chosen to complement the food while celebrating wines with real integrity and character.

Sample Creations Flight

Our fully non-alcoholic pairing, crafted in-house with zero-waste principles at its core. Using a mixture of juices, teas, extractions, and distillates, we create drinks that evolve with the seasons and pair seamlessly with our menu.

Most elements are grown, foraged, or fermented on the farm, with some sourced locally from trusted producers who share our values. The result is a flight that captures the landscape of Shropshire in every glass.

​

This innovative approach has been recognised nationally, with Joe winning the Innovation Award in the 2025 Top 100 Sommeliers for his work redefining the non-alcoholic dining experience.
